Spaghetti Bake With Bacon And Tomatoes - cooking recipe

Ingredients
    3 None onions, finely diced
    200 g smoked streaky bacon, chopped
    1-2 tbsp tomato puree
    3 tsp dried oregano
    1 tsp dried thyme
    2 cans (400g each) chopped tomatoes
    Pinch None caster sugar
    400 g spaghetti
    125 g mozzarella, sliced
    50 g Parmesan, grated
    None None Fresh thyme, to garnish
Preparation
    Preheat the oven to 350\u00b0F. Cook the bacon in a large, deep nonstick skillet over medium heat until crisp. Remove and set aside. Add the onions to the skillet and cook for 5-6 mins until softened. Stir in the tomato paste, oregano and dried thyme and cook, stirring, for 1 min. Stir in the diced tomatoes and sugar. Season with salt and pepper and simmer for 10 mins until the flavors have blended.
    Meanwhile, cook the spaghetti according to the package directions until just tender. Drain well, add to the sauce and toss gently to combine. Transfer the mixture to a large baking dish. Arrange the mozzarella on top and sprinkle with the Parmesan. Bake for 35-40 mins until bubbling. Serve garnished with thyme, if desired.
