Apple Chutney - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1/2 None onion, peeled and chopped
    1 clove garlic, peeled and crushed
    2 tbsp demerara sugar
    2 tbsp malt vinegar
    1 lb Granny Smith apples, peeled, cored and chopped
    1/2 tsp allspice
    1 None bay leaf
    1/2 tsp ground cloves
Preparation
    Heat oil in a pan. Add onion; cook for 5 mins. Add garlic and sugar. Cook for 2 mins until caramelized. Add vinegar and boil until reduced and syrupy. Add apples, allspice, bay leaf and cloves and stir to mix. Cover and cook for 10-15 mins until soft. Using a potato masher, mash to a thick paste. Serve with cod fritters.
