Pea And Ham Risotto - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None onion, peeled, finely chopped
    7 oz Arborio rice
    5 cups hot chicken stock
    5.25 oz frozen peas
    5.25 oz ham, shredded
    2 tbsp butter
    1 oz Parmesan cheese, grated, plus extra, to serve
Preparation
    Heat oil in large saucepan. Cook onion over medium heat for 4 mins, until softened. Add rice and cook, stirring, for 3 mins, or until coated with oil and slightly translucent. Add 1 cup hot stock and stir continuously until liquid is completely absorbed. Reduce heat and continue adding stock, 1/2 cup at a time, until rice is tender, about 20 mins.
    Add peas, ham, butter and Parmesan and stir until warmed through and butter and cheese are melted. Season.
    Serve topped with extra Parmesan.
