Peach Melba - cooking recipe
Ingredients

1 None bottle rose wine
3/4 cup sugar
2 cups water
1 None lemon, zested and juiced
1 None orange, zested and juiced
8 None ripe peaches
None None fresh raspberries, to serve
Preparation

In a heavy-based saucepan, combine wine, sugar, 2 cups water, juices and zests. Stir over medium heat 3-4 mins, until sugar dissolves. Add peaches, ensuring they are covered with liquid. Cover with a circle of parchment paper and weigh down with a heatproof plate. Simmer 5-10 mins, until peaches are just tender. Remove from heat and cool in poaching liquid 20 mins. Remove peaches from liquid, peel and set aside.
For the syrup, return saucepan to heat. Bring to a boil on high. Cook 15-20 mins, until reduced by half. Drizzle on peaches and serve with raspberries.
