Individual Pastitsio - cooking recipe
Ingredients

1 large eggplant, thinly sliced
1 tbsp olive oil
1 None onion, chopped
1 lb ground beef
1 can (15 oz) diced tomatoes
1 tbsp tomato paste
1 tbsp chopped parsley
1 tsp ground cinnamon
3 cups cooked macaroni
1/2 cup grated Cheddar cheese
1/2 cup grated Parmesan cheese

6 tbsp butter
1/3 cup flour
2 cups milk
Preparation

Grease six 1-cup ramekins; place on a baking pan. Sprinkle eggplant with salt; let stand 15 mins. Rinse well and pat dry.
Preheat broiler to high. Brush eggplant with oil; place on baking pan. Broil 4-5 mins, turning once.
Preheat the oven to 350\u00b0F. Heat oil in a medium saucepan on high heat. Saute onion 3-4 mins, until tender. Add ground beef; cook 4-5 mins, breaking up lumps with a spoon. Stir in tomatoes, tomato paste, parsley and cinnamon; simmer 4-5 mins, until thickened slightly. Season to taste.
Meanwhile, for the white sauce, melt butter in a medium saucepan on high heat. Add flour; cook, stirring, 1 min. Remove from heat. Blend in milk until smooth. Return to heat. Cook, stirring constantly, until sauce boils and thickens. Reduce heat to low; simmer 3 mins. Season to taste.
Place 1/2 the eggplant in prepared dishes. Top with macaroni, ground beef mixture and remaining eggplant. Cover with sauce; sprinkle with combined cheeses.
Bake 15-20 mins, until golden.
