Spinach, Arugula And Goat Cheese Omlelette - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, finely sliced
    6 None large eggs
    3 tbsp butter
    2 cups baby arugula
    3.5 oz goat cheese, crumbled
Preparation
    Heat oil in a small frying pan on medium. Cook onion, covered, for 4 mins, until soft. Remove lid; increase heat to high. Cook onion another 5 mins, until golden. Transfer to a bowl and set aside.
    Whisk eggs lightly in a small bowl; season to taste. Melt half of butter in pan on medium, until starting to foam. Pour half of egg into pan. Cook until omelette is just set.
    Sprinkle half of onion, arugula, and goat cheese over center of omelette. Using a spatula, fold omelette into thirds. Transfer to a plate. Repeat with remaining ingredients to make another omelette. Serve hot.
