Grilled Cod With Tomato, Caper And Walnut Dressing - cooking recipe
Ingredients

1 tbsp olive oil
3/4 cup cherry tomatoes
2 tbsp butter
2 tsp finely grated lemon zest
1 tsp lemon juice
1 tsp capers, drained, rinsed, finely chopped
2 tbsp walnuts, finely chopped
2 tbsp roughly chopped fresh flat-leaf parsley
2 None cod fillets (6 1/2 oz each)
Preparation

Preheat an outdoor grill or grill pan. Heat the oil in a skillet and cook tomatoes for 2-3 mins, or until tender.
In a small saucepan, melt butter on medium heat; add tomatoes and remaining ingredients except the fish. Stir for 2 mins, or until hot.
Grill fish for 3 mins each side, or until just cooked through. Serve topped with the dressing.
