Spiced Chicken With Couscous Stuffing - cooking recipe

Ingredients
    2/3 cup couscous
    1/4 cup chopped dried figs
    2 tbsp sliced almonds, toasted
    1 clove garlic, finely chopped
    1 tbsp chopped fresh cilantro
    1 tsp grated orange peel
    1/4 cup orange juice
    2 None Cornish game hens (1 1/2 lbs each)
    1 tsp cayenne pepper
    1 tsp ground cinnamon
    1 tsp ground cumin
    1 tsp sea salt
    4 large carrots, peeled and halved lengthwise
    4 None parsnips, peeled and halved lengthwise
    2 tbsp olive oil
Preparation
    Preheat the oven to 400\u00b0F.
    Combine couscous, figs, almonds, garlic, cilantro, orange peel and juice, and 1/4 cup water in a medium bowl. Season with sea salt and pepper. Let stand for 5 mins.
    Pat hens dry with a paper towel; stuff with the couscous mixture. Tie legs with twine.
    Combine spices and salt in a small bowl. Sprinkle 1/2 of the mixture over both hens.
    Place carrots and parsnips in a roasting pan. Drizzle with 1 tbsp of the olive oil. Season with remaining spice mix. Place hens on top of the vegetables; drizzle with remaining oil.
    Bake 1 hour to 1 hour 15 mins or until hens are cooked through. Remove hens to platter. Let stand 5-10 mins.
    To serve, cut each hen into 4 pieces. Serve with couscous stuffing and vegetables.
