Ham And Eggs With New Potatoes And Creamed Spinach - cooking recipe

Ingredients
    2 lbs new potatoes
    3 tbsp oil
    2 None onions, peeled and finely diced
    3 lbs baby spinach
    3/4 cup half and half
    None None Grated nutmeg, according to taste
    4 slices Canadian ham
    1 tbsp butter
    4 None eggs
Preparation
    Cook the potatoes in boiling salted water for 20 mins, until tender. Drain and keep warm.
    Meanwhile, heat 1 tbsp oil in a saucepan and saute the onions until softened. Add half the spinach and allow to wilt a little, then add the remaining spinach and simmer over a medium heat for 8 mins. Season with salt, black pepper and nutmeg and stir in the cream. Simmer for 1 min, then remove from the heat and keep warm.
    Heat 2 tbsp oil in a frying pan and fry the over ham high heat for 2 mins on each side, or until cooked through and browned. Season with salt and black pepper.
    Melt the butter in a separate frying pan and fry the eggs to your liking. Arrange the ham on plates and top with the eggs. Serve with the potatoes and spinach.
