Butter Chicken - cooking recipe
Ingredients

1/4 cup butter
2 tsp olive oil
1 None onion, diced
1 2/3 lbs boneless hicken thighs, quartered
4 cloves garlic, crushed
1/2 tsp chili powder
1/2 tsp ground cumin
2 tsp ground coriander
1 tsp ground ginger
3 tsp garam masala
3/4 cup tomato puree
1/3 cup cream
2 tsp sugar
1/2 cup Greek yogurt
None Handful cilanto, for garnish
1/4 cup pistachios, roughly chopped, for garnish
None None Steamed jasmine rice, to serve
None None Naan, to serve
Preparation

Heat butter and oil in saucepan over medium-high heat. Add onion and cook for 5 mins. Add chicken and cook for 3 mins.
Add garlic, chili powder, cumin, coriander, ginger and garam masala and stir to coat chicken with spices. Cook for 2 mins. Stir in tomato puree, cream and sugar and bring to a simmer, then reduce heat to medium-low and simmer gently for 10 mins, or until chicken is cooked through.
Remove from heat and stir in yogurt. Season to taste. Spoon into serving bowls and garnish with cilantro and pistachios. Serve with rice and naan bread.
