Moroccan Chicken With Olives - cooking recipe

1 tbsp olive oil
1 tbsp butter
2 1/4 lbs chicken thighs
2 None onions, finely chopped
2 cloves cloves, crushed
2 small lemons, sliced
1 tbsp honey
1 tsp ground cumin, plus additional, to garnish
1 tsp ground ginger
1 tsp paprika
None None Pinch of saffron or 1/2 tsp ground turmeric
1/3 cup mixed green and black pitted olives
None None Parsley leaves, to garnish
None None Couscous, to serve
Preparation

Heat the olive oil and butter in a large skillet on medium-high heat. Add the chicken thighs and cook for 10 mins, turning occasionally, until golden brown.
Add the onion, garlic, lemon slices, honey and spices with 1 cup water. Bring to a boil. Reduce heat to low; cover and simmer for 15 mins. Add olives. Season with freshly ground black pepper.
Simmer, uncovered, for 10 mins until the chicken is cooked through. Garnish with a sprinkling of ground cumin and parsley leaves. Serve with couscous.
