Burgers Italiano - cooking recipe

Ingredients
    8 oz ground chicken
    2 tbsp finely chopped drained sun-dried tomatoes
    2 tsp finely chopped fresh basil
    1 None egg white
    1/3 cup stale breadcrumbs
    1 clove garlic, crushed
    2 slices pancetta
    2 small focaccia rolls, split and toasted
    1/4 cup mayonnaise
    1/2 cup baby arugula leaves
    2 oz bocconcini (small fresh mozzarella balls), thickly sliced
Preparation
    Combine ground chicken, tomato, basil, egg white, breadcrumbs and 1/2 the garlic in a medium bowl. Shape mixture into 2 patties.
    Heat a nonstick skillet on medium heat. Spray with no stick cooking spray. Cook patties about 15 mins or until browned on both sides and cooked through.
    Cook pancetta in same pan until crisp. Drain.
    Combine mayonnaise with remaining garlic. Spread on rolls; top with arugula, burgers, pancetta and cheese.
