Apple And Raspberry Meringue Pie - cooking recipe

1 sheet frozen pie crust pastry, thawed
1/2 cup raspberry jam
2 x 14 oz cans apple pie filling
1/2 cup ground almonds
1/2 cup sugar + 1 tbsp
3 None large egg whites, at room temperature
1/2 tsp vanilla extract

Preheat oven to 400\u00b0F. Grease an 8 inch springform pie pan. Place on a baking sheet.
Line pan with pastry. Trim excess. Prick base with a fork. Line pastry with parchment paper and cover with pie weights. Bake for 10 mins. Remove weights and paper. Bake for 6 mins or until just golden.
Spread jam over crust. Combine apple, almonds and 1 tbsp sugar in a bowl. Spoon apple mixture over jam.
Using an electric mixer, beat egg whites in a large, clean, dry bowl until soft peaks form. Gradually add 1/2 cup sugar, beating well after each addition, until sugar dissolves and mixture is thick, glossy and forms firm peaks. Add vanilla and beat until combined. Spoon meringue over apples. Bake for 5-6 mins or until lightly browned. Serve.
