Bok Choy With Oyster Mushrooms And Black Bean Sauce - cooking recipe

Ingredients
    1 None hot red chili, chopped
    2 cloves garlic, finely chopped
    1 tbsp ginger, peeled, grated
    1-2 tbsp black bean sauce
    1 tbsp rice wine (or white wine)
    1/2 cup hot vegetable stock
    3 1/2 small heads bok choy, trimmed, separated into leaves, any tough leaves discarded
    1 tbsp peanut oil
    3.5 oz oyster mushrooms
    None None soy sauce, to serve
Preparation
    Combine chili, garlic, ginger, black bean sauce, rice wine and stock.
    Heat peanut oil in a wok over medium-high heat. Stir-fry bok choy for 1 min. Add black bean mixture and stir-fry for 30 seconds. Add mushrooms and continue stir-frying until bok choy is shiny, evenly coated with black bean mixture and just starting to soften. Transfer to a warm serving bowl. Serve immediately with soy sauce.
