Eggs And Bacon Pie - cooking recipe
Ingredients

8 tbsp butter, melted
1 tbsp vegetable or olive oil
1 None onion, finely chopped
1 lb bacon, chopped
10 sheets filo pastry
8 None large eggs, at room temperature
1 cup heavy cream
5 oz Cheddar cheese, grated
3 tsp finely chopped fresh thyme
None None chutney and mixed greens, to serve
Preparation

Preheat oven to 350\u00b0F. Grease an 8 inch diameter springform pan with a little of the melted butter. Heat oil in a frying pan over medium-high heat. Add onion and cook, stirring, 5 mins, until softened. Add bacon and cook, stirring, 5 more mins, until browned. Cool slightly.
For the shell, place 1 sheet of pastry on a flat surface. Brush with a little melted butter. Fold in half to form a square. Repeat with remaining pastry sheets to make 10 squares total. Place 1 pastry square in prepared pan, with corners sitting above rim. Brush with butter. Top with another square, rotating slightly. Repeat with remaining pastry and butter.
For the filling, whisk eggs and cream in a large bowl until combined. Stir in bacon mixture, cheese and thyme. Pour into prepared shell. Place pan on a baking sheet. Bake 50 mins, until set. Cool in pan 15 mins. Release pan and cut into wedges. Serve with chutney and mixed greens.
