Cherry Pecan Cookies - cooking recipe

Ingredients
    1/2 cup butter
    1/2 cup brown sugar
    1 large egg
    1 tsp vanilla extract
    1/2 cup self-rising flour, sifted
    4.25 oz glace cherries, chopped, plus extra. quartered, to decorate
    1.25 oz pecans, chopped
    1/2 None orange, finely grated zest
Preparation
    Preheat oven to 325\u00b0F. Line a baking sheet with parchment paper.
    In a large bowl, beat butter and sugar together until pale and creamy. Beat in egg and vanilla. Fold in flour, followed by cherries, nuts and zest.
    Drop tablespoons of mixture onto baking sheet. Flatten slightly with a floured fork and top with extra cherry quarters. Bake 15-20 minutes. Cool on baking sheets 5 minutes before transferring to a wire rack to cool completely.
