Char Siu Pork With Rice Noodles - cooking recipe

13 oz large rice stick noodles
1 bunch Chinese broccoli, stalks and tops separated, cut into bite-size pieces
1/2 cup Chinese barbecue sauce (char siu sauce)
1 1/2 tbsp soy sauce
1 tbsp finely grated ginger
3 cloves garlic, minced
1 None long red chili pepper, chopped
1/2 cup chicken stock
1 lb boneless pork chops, cut into thin strips
1 tbsp vegetable oil
4 None green onions, sliced
1 1/2 cups bean sprouts
1/2 cup fresh cilantro leaves
1/2 cup roasted peanuts, chopped
Preparation

Cover the noodles and broccoli stalks generously with boiling water and let stand for 6 to 8 mins, until just tender. Drain well and rinse under cold water.
Mix the char siu sauce, soy sauce, ginger, garlic and chili pepper in a large bowl. Combine 1/2 of the mixture with the stock, and reserve. Add the pork to the remaining sauce and stir well to coat.
Heat the oil in a wok on high heat. Add the onion and stir-fry for 1 min. Add the pork and stir-fry for 3 mins, until the pork is golden but not quite cooked through.
Add the drained noodles, broccoli stalks and raw broccoli tops. Pour in the stock and sauce mixture. Stir-fry for 3 mins until cooked through and thoroughly coated in the sauce. Remove from the heat. Stir in most of the bean sprouts and cilantro.
Serve topped with roasted peanuts, and the remaining bean sprouts and cilantro.
