Sticky Date Muffins - cooking recipe

6 oz pitted dates, chopped
3/4 cup orange juice
2 None large eggs, lightly beaten
1/2 cup honey
1/4 cup oil
3 tbsp gluten-free self-rising flour
1/3 cup chopped pistachios
1/3 cup chocolate chips
None None powdered sugar, for dusting
Preparation

Preheat oven to 350\u00b0F. Line a muffin pan with paper liners.
Combine dates and orange juice in a microwave-safe bowl. Microwave, covered, on HIGH (100%) power for 1 min. Set aside for 10 mins.
Transfer dates to a large bowl. Whisk in eggs, honey and oil until combined. Fold in flour then pistachios and chocolate chips. Distribute between paper liners and bake for 20-25 mins. Let cool in pan for 5 mins then transfer to a wire rack to cool completely. Dust with powdered sugar to serve.
