Beef Koftas With Rice Salad - cooking recipe

Ingredients
    1/4 cup oil
    1 None small onion, finely chopped
    2 cloves garlic, minced
    2 tsp curry powder
    1 lb ground beef
    2 tbsp chopped fresh parsley
    1 None egg
    1 None long red chili, finely chopped
    1/2 None lemon, zested
    None None Rice Salad
    3 oz cooked long grain rice
    2 None tomatoes, seeded, chopped
    4 sprigs fresh cilantro, leaves picked
    2 tbsp olive oil
    1 tbsp lemon juice
Preparation
    Heat 1 tbsp oil in a large frying pan. Saute onion and garlic for 1-2 mins, until tender. Add curry powder. Cook, stirring, for 1 min. Remove from heat and let cool slightly. Mix with ground beef, parsley, egg, chili and lemon zest. Shape into 12 small sausages, each around 6 inches long. Mold around 12 soaked bamboo skewers. Chill for 10 mins.
    Meanwhile, to make the rice salad, combine all ingredients. Season. Set aside.
    Working in batches, heat remaining oil in a large frying pan. Cook koftas for 6-8 mins, turning occasionally, until cooked through. Serve on a bed of rice salad.
