Asian Spinach Noodles - cooking recipe

Ingredients
    1 tbsp vegetable oil
    5 oz mushrooms, sliced
    2 None scallions, white and green parts chopped separately
    10.5 oz baby spinach
    1 tbsp tamari
    1 tbsp sesame seeds
    2 tsp sesame oil
    1 tbsp rice wine vinegar
    None None cooked soba noodles, to serve
Preparation
    Heat oil in a large wok over high heat. Stir-fry mushrooms and white parts of scallions for 2-3 mins, until tender. Add spinach, remaining scallions, tamari, sesame seeds and sesame oil. Stir fry for 1-2 mins, until just wilted. Toss with vinegar and cooked noodles.
