Leg Of Lamb With Green Beans - cooking recipe

Ingredients
    3 1/3 pounds leg of lamb on the bone
    3 cloves garlic, peeled and chopped finely
    2 sprigs rosemary
    3 tbsp olive oil
    1 lb potatoes, peeled and chopped
    3/4 lb tomatoes
    1 tbsp coarse sea salt
    1 1/2 lbs green beans
    3 None shallots, peeled and chopped into rings
    1/4 cup bacon, cut into strips
Preparation
    Preheat the oven to 425\u00b0F. Sprinkle the leg of lamb with salt, pepper, garlic and rosemary and put it into an oiled baking tray. Sprinkle with 2 tbsp of oil and roast it for 30 mins. Turn the oven down to 325\u00b0F and roast for another 1 1/2 hours. 30 mins from the end of cooking time arrange the seasoned potatoes around the lamb and drizzle them with 1 tbsp olive oil. Season the tomatoes with sea salt and add them to the lamb with 10 mins to go.
    Cook the beans in boiling salted water for 8-10 mins. Fry the bacon in a small pan until crisp. Remove it and fry the shallots in the bacon fat until they're translucent. Drain the beans and mix them with the bacon and shallots. Serve the lamb with the potatoes and beans.
