1 None orange, zested and juiced
1/2 cup granulated sugar
3/4 cup creme fraiche
None None PEARS
3/4 cup red wine
1/4 cup sugar
1 None cinnamon stick
2 None star anise
2 None ripe, firm pears, peeled
Preparation

For the sorbet, bring orange zest, orange juice and sugar to a boil. Boil for 2 mins then let cool. Whisk in creme fraiche then freeze for 2 hours. Remove from freezer and beat until smooth. Repeat once more then freeze until firm.
For the poached pears, bring red wine, sugar, cinnamon stick, star anise and 1/2 cup water to a boil. Add pears and simmer for 20-30 mins, until tender. Let pears cool in syrup.
Remove creme fraiche sorbet from freezer 45 mins before serving. Transfer pears to 2 serving bowls. Add a large scoop of sorbet then drizzle with wine syrup. Decorate with star anise and cinnamon stick.
