Fluffy Ham And Asparagus Omelette - cooking recipe

4 None eggs, separated
1 tbsp milk
1 tbsp flour
1 tbsp olive oil
1/4 cup ricotta cheese
2 oz thinly sliced ham
6 None asparagus spears, trimmed and steamed
Preparation

Preheat the oven to 375\u00b0F. Beat egg yolks, milk and flour in large bowl. Set aside.
Beat egg whites with electric mixer on medium speed until soft peaks form. Gently fold egg whites into yolk mixture. Heat olive oil in a large ovenproof skillet on low heat. Pour in egg mixture.
Bake 6 mins, until puffed and golden. Slide onto a heated serving dish. Spread ricotta on half of omelette and top with ham and asparagus. Fold omelette over to enclose filling. Cut into wedges to serve.
