Beef Fajita Wraps - cooking recipe

Ingredients
    4 None large tortillas
    2 tbsp olive oil
    1 None medium onion, peeled and sliced thinly
    1 None small green pepper, sliced thinly
    2 cloves garlic, peeled and crushed
    1 lb beef strips (tender cut such as rump, fillet or sirloin)
    2 tsp sweet paprika
    1 tbsp tomato paste
    2 1/2 cups baby spinach leaves
    1 None large tomato, seeded and chopped
    1/2 cup sour cream
Preparation
    Preheat the oven to 350\u00b0F. Wrap the tortillas in foil and bake for about 10 mins or until heated through.
    Meanwhile, heat half the oil in a large shallow frying pan and cook the onion, pepper and garlic, stirring, until the onion softens. Remove from the pan.
    Heat the remaining oil in the pan. Cook the beef over high heat until browned, then stir in the paprika and tomato paste. Season to taste, then stir in 2 tbsp water.
    Return the onion mixture to pan and cook, stirring, until combined.
    Divide the spinach among the tortillas, then top with the beef mixture, tomato and sour cream. Fold in half, then fold in the sides to enclose the filling and form a cone. Serve.
