Tikka Fish Skewers With Coconut Sambal - cooking recipe

1/4 cup tikka masala curry paste
1/4 cup plain yogurt
1 1/3 lbs firm white fish fillets, cut into 3/4-inch pieces
1/2 cup flaked coconut
1/4 cup chopped fresh cilantro
2 tbsp lemon juice
1 None red chili pepper, seeded and finely chopped
1 medium zucchini, cut into 1/2-inch thick rounds
1 medium green pepper, seeded and cut into 3/4-inch pieces
1 large red pepper, seeded and cut into 3/4-inch pieces
9 oz cherry tomatoes
None None Steamed rice, to serve
Preparation

Mix curry paste and yogurt in a large glass or ceramic bowl. Add fish; turn to coat. Let stand for 5 mins.
Meanwhile, place coconut in a medium skillet on medium heat. Cook, stirring, for 2-3 mins, or until golden brown. Transfer to a small bowl. Cool. Add cilantro, juice and chili pepper. Season sambal with salt and pepper.
Thread fish, zucchini, peppers and tomatoes alternately onto 8 skewers. Preheat a grill pan on medium-high heat or heat grill to medium. Spray skewers with no stick cooking spray. Cook, turning, for 6-7 mins, or until browned and cooked through. Serve skewers with sambal and rice.
