Apricot Crumble Bars - cooking recipe

7 tbsp butter, melted
1 cup all-purpose flour, plus 2 tbsp
1/3 cup granulated sugar

9 oz finely chopped dried apricots
1/4 cup granulated sugar
None None For the Coconut Topping
1/3 cup desiccated coconut
3 tbsp shredded coconut
1/2 cup all-purpose flour
1/2 cup firmly packed brown sugar
Preparation

Preheat oven to 350\u00b0F. Grease a 7x12 inch rimmed baking pan.
To make the crust, in a small bowl, combine butter, flour and sugar. Transfer to prepared pan and press into base. Bake for 20 mins, or until golden brown.
Meanwhile, to make the filling, combine apricots, 1 cup water and sugar in a medium saucepan. Simmer for 10 mins, or until thick, stirring occasionally.
To make the coconut topping, combine all ingredients in a medium bowl and mix to combine.
Spread the hot filling over the hot base and sprinkle with coconut topping. Bake for 20 mins, or until golden brown. Let cool in pan. Cut into bars to serve.
