1/4 cup flour
2 tbsp runny honey
1 tbsp sugar
1 None egg white
2 tbsp butter, melted
1 cup vanilla ice cream, softened slightly
3 oz semi-sweet chocolate, melted

Preheat the oven to 350\u00b0F. Line 2 large baking sheets with parchment paper.
Beat flour, honey, sugar, egg white and butter in medium bowl with an electric mixer on medium speed until well mixed. For each cookie, place 1 tsp of mixture on prepared baking sheet; spread to a 2-inch circle.
Bake for 8-10 mins or until golden brown, swapping pans halfway through cooking. Cool in pans on wire racks (cookies will crisp on cooling).
Sandwich cookies with ice cream. Place in the freezer for 15-20 mins to set. Drizzle ice cream sandwiches with melted chocolate.
