Mini Chicken Blt Wedge Salads - cooking recipe

Ingredients
    1/2 lb bacon
    1 cup chicken, diced
    1 cup diced tomato
    2 None hard-boiled eggs, diced
    1 None avocado, diced
    1/4 cup sliced scallion
    2 heads iceberg, Boston or Bibb lettuce, cut into 12 wedges, inner layers removed to form a cup
    1/2 cup shredded Cheddar cheese
    1 cup Ranch dressing
Preparation
    In a large frying pan, cook bacon until crispy. Drain on paper towels. Toss with chicken, tomato, eggs, avocado and scallion. Distribute between lettuce cups and sprinkle with cheese. Serve with dressing.
