Half Time Fajitas - cooking recipe
Ingredients

1 tbsp chili oil
1 2/3 lbs boneless skinless chicken thighs, trimmed and sliced
1 None red pepper, seeded and thinly sliced
1 None red onion, thinly sliced
1 lb large shrimp, peeled and deveined
3/4 cup sweet and sour stir-fry sauce
1/2 cup coarsely chopped cilantro
1 None lime, peel finely grated and lime juiced
12 None flour tortillas
None None Arugula leaves, halved cherry tomatoes, coarsely chopped roasted cashew nuts, to serve
Preparation

Heat oil in a large skillet on high heat. Cook chicken 4-5 mins, until well browned.
Add pepper and onion; cook, stirring, 2-3 mins, until softened.
Add shrimp; cook 1-2 mins, until almost cooked through. Stir in sauce; cook 2-3 mins, until heated through.
Stir in cilantro and lime peel and juice. Pile onto tortillas. Serve with arugula, tomatoes and cashews.
