Pastry Croutes With Lamb And Avocado - cooking recipe

1 sheet frozen puff pastry, thawed
1 None egg, beaten
1 1/4 lbs boneless lamb
1/2 tsp ground cumin
1/2 tsp ground coriander
3 tbsp olive oil
1 large avocado, peeled and pitted
2 cloves garlic, peeled
2/3 cup sour cream
1 tbsp lemon juice
Preparation

Preheat the oven to 400\u00b0F. Cut four 5-inch circles from puff pastry sheet. Place on greased baking sheet. Lightly score pastry then brush with beaten egg. Bake for 15 mins until golden.
Meanwhile, season lamb with cumin and coriander. Heat oil in large skillet on medium heat. Cook 15-18 mins, turning once, until just pink in the center.
Process avocado, garlic, sour cream, lemon juice in food processor until smooth. Season. Slice lamb and serve piled on pastry croutes with avocado sauce.
