Liver With Mashed Potatoes, Apples And Onions - cooking recipe

Ingredients
    1 kg potatoes, peeled
    4 None onions, peeled and sliced into thin rings
    6 tbsp plain flour
    4 slices liver (about 150g each)
    8 tbsp butter
    2 None apples, cored and cut into wedges
    200 ml semi-skimmed milk
    None None Pinch of grated nutmeg
    None None Fresh curly parsley, for garnish
Preparation
    Cook the potatoes in boiling salted water for 20 mins, or until tender.
    Sprinkle the onions with 2 tbsp flour and tap off any excess. Roll the liver in 4 tbsp flour and tap off any excess. Melt 2 tbsp butter in a frying pan and saute the liver for 2-3 mins on each side. Season with salt and black pepper, remove from the pan and keep warm. Melt 3 tbsp butter in the hot pan and fry the onions and apples for 4 mins, turning.
    In a saucepan, heat the milk and 3 tbsp butter. Drain the potatoes, add the milk mixture and mash. Season with salt and nutmeg.
    Arrange the liver and mashed potatoes on serving plates and top the liver with the apples and onions. Garnish with parsley.
