Almond Trout With Simple Green Salad - cooking recipe

4 whole trout, gutted and cleaned (9-10 oz each)
4 tbsp lemon juice
4 tbsp all-purpose flour
7 tbsp oil
6 tbsp butter
3 tbsp white wine vinegar
None None Pinch of sugar
1 head lettuce, torn into bite-sized pieces
3/4 cup sliced almonds
4 sprigs fresh flat-leaf parsley, some reserved for garnish, remainder chopped
None None Lemon slices, for garnish
Preparation

Preheat the oven to 400\u00b0F. Drizzle the trout with the lemon juice and season inside and out with salt. Roll in the flour and tap off the excess.
Heat 2 tbsp oil and 2 tbsp butter in a frying pan. Sear 2 trout over medium heat for 4 mins on each side. Repeat with another 2 tbsp oil, 2 tbsp butter and the remaining trout. Lay side by side on a baking sheet and bake for 10-12 mins.
Place the vinegar in a bowl and season with salt, black pepper and a pinch of sugar. Gradually whisk in 3 tbsp oil. Toss with the lettuce.
Melt remaining 2 tbsp butter in the same frying pan and saute the almonds until golden brown. Arrange the trout on serving plates, drizzle the almond butter on top and sprinkle with chopped parsley. Garnish with lemon slices and parsley and serve with the salad.
