Ingredients

4 None chicken breasts, each halved horizontally
8 slices bacon
1 (8 oz) can sliced pineapple in juice, drained, juice reserved, slices halved
2 tsp cornstarch
1 tbsp whole-grain mustard
3 tsp honey
Preparation

Preheat oven to 300\u00b0F.
Coat a large nonstick frying pan with oil and place over high heat. Sear chicken on both sides then transfer to a large baking dish. Arrange in a single layer. Add bacon to pan and cook until crisp. Lay over chicken. Add pineapple slices to pan and sear on both sides. Lay over bacon. Bake for 5-10 mins.
Meanwhile, to make the sauce, whisk cornstarch with 1/3 cup water in a small saucepan. Add reserved pineapple juice, mustard and honey. Bring to a boil then reduce heat and simmer for 2 mins, or until thickened. Drizzle over chicken to serve.
