Chorizo And Spinach Pizzettas - cooking recipe

Ingredients
    None None FOR THE PIZZA DOUGH
    1 pkg (1/4 oz) instant yeast
    1 tsp fine table salt
    1/2 tsp sugar
    2 1/2 cups flour
    2 tbsp butter, melted
    2 tbsp olive oil
    None None FOR THE TOPPING
    5 oz baby spinach leaves, finely shredded
    2 cloves garlic, chopped
    4 None anchovy fillets, drained and finely chopped
    1 tbsp olive oil
    1/4 cup coarsely chopped fresh flat-leaf parsley
    1 None cured chorizo sausage, thinly sliced
    5 oz manchego cheese, grated
Preparation
    For the pizza dough, combine yeast, salt, sugar and sifted flour in medium bowl. Stir in butter, oil and about 3/4 cup warm water to mix to a soft dough. Knead dough on floured surface about 5 mins or until smooth and elastic. Place dough in large oiled bowl; cover. Let stand in warm place about 1 hour or until dough doubles in size. Punch dough down with fist; knead dough on floured surface until smooth.
    Preheat the oven to 425\u00b0F. Oil 2 large baking pans; line with parchment paper.
    Place spinach, garlic, anchovies, oil and parsley in a medium bowl.
    Divide dough into eight equal pieces. Roll each piece into a 6-inch round. Place on prepared pans.
    Spread pizzas with spinach mixture. Top with chorizo and cheese.
    Bake pizzettas about 8 mins or until browned and crisp.
