Lentil Burgers With Braised Beets And Yogurt Sauce - cooking recipe

Ingredients
    2 x 390 g cans green lentils, drained, rinsed and dried
    1 None onion, peeled and diced
    100 g carrots, trimmed and finely chopped
    100 g mushrooms, chopped
    1 None medium egg
    4 tbsp breadcrumbs
    1 tsp paprika
    2 tbsp olive oil
    2 tbsp butter
    600 g beetroot, peeled and thinly sliced
    200 ml vegetable stock
    None None Zest and juice of 1 lemon
    200 g greek yogurt
    3 tbsp chopped fresh mint leaves
Preparation
    For the lentil burgers, pulse the lentils, onion, carrot, mushrooms and egg in a food processor until finely chopped. Mix in the breadcrumbs and paprika and season. Form the mixture into 8 patties. Heat the oil in a frying pan over medium heat and cook the patties for 10-12 mins, turning.
    For the beets, heat the butter in a frying pan. Add the beets and saute them for 3-4 mins, stirring. Pour in the stock and simmer for 4-5 mins, until the beets are tender. Stir in the lemon zest and 2 tbsp lemon juice. Season.
    To make the sauce, mix the yogurt and mint together and season. Arrange the beets and lentil burgers between 4 plates and spoon the sauce on top.
