Warm Gnocchi Salad - cooking recipe
Ingredients

1 (10 oz) jar chargrilled peppers in oil, drained, sliced thinly, 1/4 cup oil reserved
2 tbsp red wine vinegar
2 cloves garlic, minced
1/3 cup olive oil
18 oz potato gnocchi
3 oz black olives
1 (12 oz) jar marinated artichoke hearts, drained, quartered
1 None medium red onion, thinly sliced
4-5 sprigs fresh basil, leaves picked
1/4 cup walnuts, toasted
Preparation

Whisk together reserved pepper oil with vinegar, garlic and olive oil. Set aside.
Cook gnocchi in simmering water for 3 mins, or until gnocchi float to the surface. Drain then transfer to a large bowl along with peppers, olives, artichokes, onion and basil. Add oil mixture and season to taste. Toss gently. Sprinkle with walnuts to serve.
