Sausage, Pea And Feta Couscous - cooking recipe

1 tbsp vegetable or olive oil
1 lb thin lamb sausages
1 None large red onion, thinly sliced
2 tsp paprika
1 x 14 oz can chopped tomatoes
5 oz frozen peas, thawed
1/3 cup couscous
2 tbsp flat leaf parsley, chopped
3.5 oz feta, crumbled
None None Crusty bread, to serve
None None Mixed greens, to serve
Preparation

Heat half the oil in a large frying pan over moderately high heat. Add sausages; cook and turn for 4-5 mins or until browned. Transfer to a chopping board; Cut into 1/2 inch-thick slices.
Return pan to moderate heat. Add remaining oil and onion; cook and stir for 4-5 mins or until soft. Add paprika. Return sausages to pan; cook and stir for 5 mins or until sausages are cooked.
Add tomato and peas; simmer, uncovered, for 3-4 mins. Add couscous and 1/2 cup boiling water. Remove from heat. Cover pan and set aside for 5 mins or until liquid is absorbed.
Using a fork, fluff and separate grains. Sprinkle with parsley and feta. Serve with bread and salad.
