Winter Squash And Macaroni Casserole - cooking recipe

Ingredients
    1 lb winter squash, peeled, deseeded and finely chopped
    1 tbsp vegetable or olive oil
    2.5 oz macaroni
    4 None eggs, lightly whisked
    1/2 cup heavy cream
    3 oz baby spinach
    3 oz cheddar cheese, grated
    None None cucumber, peeled and thinly sliced, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Coat squash in oil, transfer to prepared pan and roast for 10 mins, or until tender.
    Meanwhile, grease and line an 8 x 12 inch baking tray with parchment paper. Cook pasta in boiling salted water for 6 mins, or until al dente. Drain. Mix with squash, egg, cream, spinach and 1.5 oz cheese. Transfer to prepared pan and smooth surface. Sprinkle top with remaining cheese and bake for 20 mins, or until golden and set. Let cool for 10 mins in tray then cut into 6 pieces. Serve with cucumber.
