Veal Tortellini With Tomato Sauce - cooking recipe

Ingredients
    1 1/3 lbs veal tortellini or ravioli
    1/4 cup olive oil
    1 None onion, coarsely chopped
    2 cloves garlic, crushed
    5 None ripe tomatoes, coarsely chopped
    3/4 cup vegetable stock
    2 tbsp shaved Parmesan cheese
    2 tbsp fresh baby basil leaves
    1/4 cup balsamic vinegar
Preparation
    Cook pasta in large saucepan of boiling water according to package directions. Drain and return to pan.
    Meanwhile, heat half of the oil in medium skillet on medium heat. Cook onion and garlic, stirring, until onion is soft. Stir in tomato and stock; cook, covered, for 10 mins or until tomato is soft.
    Add tomato mixture and remaining oil to pasta; toss to combine. Serve topped with Parmesan cheese and basil; drizzle with vinegar.
