Ingredients

1 sheet frozen puff pastry, partially thawed
1 None medium egg
1/2 tbsp heavy cream
2 tsp Dijon mustard
6 thin slices prosciutto
1 bunch asparagus, trimmed, blanched
4 oz Brie cheese, thinly sliced
None None mixed greens, to serve
Preparation

Preheat oven to 425\u00b0F. Line a baking tray with parchment paper.
Place puff pastry on prepared tray. Using a small knife, score a 3/4 inch border around edge of pastry. Using a fork, prick center 4 times. Bake for 6-8 mins, until puffed and just starting to brown. Let cool slightly then press center down with a fork.
Meanwhile, whisk together egg, cream and mustard. Season to taste.
Arrange prosciutto over tart base then top with a single layer of asparagus. Add Brie then pour egg mixture over top. Bake for 10-12 mins, until pastry is golden brown and egg mixture is just set. Serve with mixed greens.
