Sausage And Pepper Paella - cooking recipe

Ingredients
    2 tbsp oil
    1 lb gourmet turkey sausages
    1 None green pepper, seeded, chopped
    1/4 lb salami slices, chopped
    1 None red onion, chopped
    2 cloves garlic, crushed
    4 oz arborio rice
    2 tsp smoked paprika
    None 3-4 saffron threads
    4 1/4 cups chicken stock
    2 None tomatoes, finely chopped
    1 oz parsley, chopped
Preparation
    Heat oil in a large, deep frying pan over high heat. Cook sausages for 5-6 mins, turning until browned all over. Cut into thick slices. Saute pepper, salami, onion and garlic in same pan for 4-5 mins, until onion is tender and golden. Add rice, paprika and saffron. Cook for 1 min. Return sausage to pan along with the stock. Bring to a boil then reduce heat to low. Simmer, without stirring, for 20-25 mins, until rice is tender. Sprinkle with tomatoes and parsley to serve.
