Salmon With Cajun Potato Wedges - cooking recipe

Ingredients
    2 None medium red-skinned potatoes, peeled, cut into wedges
    2 tbsp olive oil
    1 tbsp Cajun seasoning
    4 None skinless salmon fillets
    None None salad, to serve
    None None lemon wedges, to serve
Preparation
    Pre-heat oven to 400\u00b0F. In a bowl, toss potatoes, oil and seasoning together until potatoes are well coated. Spread in a single layer in flame-proof baking dish. Cook over high heat for 8-10 mins, turning occasionally, then transfer dish to the oven and bake 25-30 mins, turning twice.
    When the potatoes are almost ready, season the salmon with salt and pepper. Cook in a lightly oiled non-stick frying pan over medium heat, for 3-4 mins each side, until cooked through. Serve with potatoes, salad and lemon wedges.
