Chicken Wrapped In Prosciutto With Sage - cooking recipe

1 1/3 lb potatoes, scrubbed and cut into wedges
2 tbsp olive oil, divided
4 None chicken breast, halved
4 None slices prosciutto, halved lengthways
4 leaves sage
1 lb broccoli florets
1 None garlic clove, thinly sliced
1 cup chicken stock

Preheat the oven to 400\u00b0F. Place the potato wedges on a large baking sheet. Season with salt and freshly ground black pepper. Drizzle over 1 tbsp of the oil and toss well to coat. Roast for 30 mins.
Wrap the chicken pieces in a strip of prosciutto, place a sage leaf on top and secure with a skewer.
Cook the broccoli in boiling water for 5-8 mins until tender. Drain.
Heat the remaining oil in a large, deep frying pan, fry the chicken for 4-5 mins each side until cooked through (you may need to do this in batches). Remove from the pan and keep warm.
Add the garlic to the frying pan and cook briefly. Pour in the chicken stock and bring to a boil. Serve with the chicken, broccoli and potato wedges.
