Salmon With Spinach Salad With Ginger Citrus Dressing - cooking recipe

Ingredients
    10 g fresh ginger, finely grated
    1 None shallot, finely diced
    1 None orange, juiced
    1 None lime, juiced
    4 None salmon fillets, about 160g each
    50 g flour
    2 tbsp olive oil
    100 g baby spinach
    1 None red pepper, diced
    1 None yellow pepper, diced
Preparation
    Mix the ginger, shallot, orange juice, and lime juice. Season with salt and pepper, cover, and set dressing aside.
    Dust the salmon fillets with flour then heat the oil in a large frying pan and cook over medium heat for 2-3 minutes on each side.
    Mix together the spinach, peppers, and dressing. Serve the salmon on a bed of the dressed salad.
