Parmesan Crusted Chicken Fingers - cooking recipe

Ingredients
    2.5 oz polenta
    2/3 cup breadcrumbs
    1 clove garlic, peeled and minced
    1/4 cup fresh tarragon, chopped
    1/2 cup Parmesan cheese, grated
    1 1/4 lb chicken breast, cut diagonally into thin slices
    1/3 cup all-purpose flour
    2 None eggs, beaten and seasoned
    3-5 tbsp oil
Preparation
    In a bowl, mix polenta, breadcrumbs, garlic, tarragon and Parmesan. Dredge chicken in flour, tap off any excess, roll in egg then polenta mixture. Heat oil in a frying pan and fry chicken, turning, for 3-4 mins until crispy. Remove from pan and drain on paper towels.
