Bacon, Tomato And Mushroom Tartine With Lemon, Chili And Garlic Butter - cooking recipe

4 slices bacon
2 None tomatoes, halved
4 None cherry tomatoes, halved
2 None portobello mushrooms
4 slices sourdough bread
None None FOR THE LEMON, CHILI AND GARLIC BUTTER
1/2 cup butter, softened
1 None lemon, zested, 2 tbsp juice reserved
1 tsp finely diced fresh red chili
1 tsp finely chopped fresh herbs
2 cloves garlic, finely chopped
1/2 tsp flaky sea salt
Preparation

Preheat oven to 325\u00b0F. Line a large baking tray with parchment paper.
Arrange bacon, tomatoes, mushrooms and bread in a single layer on prepared tray. Beat together all ingredients for butter then brush generously over bread, mushrooms and tomatoes. Bake for 10-15 mins, until bacon is crispy. Assemble bacon, tomatoes and mushrooms over toast. Serve.
