Bircher Muesli With Caramelized Poached Pears - cooking recipe

6 small Bosc pears
2 cups dry white wine
1 cup sugar
1/2 cup maple syrup
1 medium lemon, halved
2 None bay leaves
3 tbsp butter
1/3 cup firmly packed brown sugar

3 cups rolled oats
2 cups apple juice
1 None pear
1/2 cup light cream
2 tbsp honey
1 cup Greek-style yogurt
1/3 cup golden raisins
1/3 cup sliced almonds, toasted
Preparation

For the caramelized poached pears, peel and core pears; quarter lengthwise. Place pears in a large saucepan with wine, 2 cups water, sugar, maple syrup, lemon and bay leaves. Bring to a boil.
Reduce heat to low; simmer, covered, about 30 mins or until tender. Using a slotted spoon, remove pears from syrup (reserve syrup for another use, if you like). Cool pears slightly so they hold their shape.
Melt butter in a large skillet on medium heat. Add pears and brown sugar; cook, stirring occasionally, until pears are caramelized.
For the bircher muesli, combine oats and apple juice in a large bowl. Cover; refrigerate overnight.
Coarsely grate pear. Stir into oat mixture with cream, honey, 1/2 cup of the yogurt, raisins and nuts.
Serve muesli topped with caramelized poached pears and remaining 1/2 cup of yogurt
