Grilled Lemon Chicken With Crushed Potatoes - cooking recipe

Ingredients
    2 lbs new potatoes
    1/2 cup light cream
    1/4 cup chopped parsley
    1 clove garlic, crushed
    1 None lemon; 1 tsp grated peel, lemon cut into wedges
    2 lbs boneless skinless chicken breast, cut into 1 1/2-inch strips
    None None Olive oil, for drizzling
Preparation
    Boil, steam or microwave potatoes until tender, drain. Mash half the potatoes with cream until almost smooth. Roughly crush remaining potatoes with the back of a fork until skins burst. Fold into mashed potatoes with parsley. Season to taste.
    Preheat the grill on medium heat. Combine garlic, lemon peel and chicken in a bowl; season.
    Grill chicken until cooked through and browned on both sides. Serve chicken with potatoes and lemon wedges. Drizzle with a little olive oil.
