Pork Lettuce Cups - San Choy Bau - cooking recipe

Ingredients
    1 tbsp peanut oil
    1 1/2 lbs ground pork
    2 cloves garlic, crushed
    1 (7oz) can water chestnuts, drained and finely chopped
    1 None red pepper, deseeded and finely chopped
    4 None green onions, finely sliced, plus extra, for garnish
    2 tbsp light soy sauce, plus extra, to serve
    2 tbsp brown sugar
    1 tbsp fish sauce (optional)
    1 None lime, juiced
    8 None whole iceberg lettuce leaves
    None None fresh cilantro leaves, for garnish
Preparation
    Heat oil in wok or frying pan. Add pork and garlic and stir-fry over high heat for 7 mins. Add water chestnuts, pepper and green onions and mix well. Add soy sauce, sugar, fish sauce (if using) and lime juice and cook for 2 mins.
    Taste and add a little more sugar, soy, fish sauce or lime juice if required.
    Scoop mix into lettuce leaves and garnish with a sprinkling of green onion and cilantro. Serve warm with soy sauce on the side.
