Bacon And Cheese Potatoes - cooking recipe

Ingredients
    6 large potatoes
    1 medium onion, thinly sliced
    3 slices bacon, coarsely chopped
    1/3 cup sour cream
    1/3 cup plus 2 tbsp grated Cheddar cheese
    2 tsp finely chopped fresh chives
Preparation
    Microwave or boil the unpeeled potatoes until tender; drain.
    Cook the onion and bacon in a heated, oiled skillet until browned.
    Preheat the broiler.
    Cut and discard a shallow slice from the side of each potato. Scoop out two-thirds of the potato from each shell. Place the shells on a parchment paper-lined baking pan (you may need to cut a slice from the bottom to ensure it stands up). Combine half the potato flesh, bacon mixture, sour cream and 1/3 cup of the cheese in a medium bowl. (Reserve remaining potato flesh for another use.)
    Spoon the mixture into the shells and top with the remaining 1 tbsp cheese. Broil until the cheese browns. Sprinkle with chives and serve.
